Healthy and Smart... Rice Cake

Rice Cake

2 cups of leftover rice
3 large eggs
1 cup of low fat grated cheese
1/3 cup of chopped spring onions
3 tablespoons of mint
1/4 teaspoon of salt
1/4 teaspoon of black pepper
1/4 teaspoon of cumin
Olive oil for frying

Mix the ingredients then fry in batches, using olive oil.

Serve with yoghurt and mint.
